Any advice on how to manouvre a yacht with an inboard engine and an offset prop?

Using the engine to help you maneuver depends a lot upon which side the prop is offset to, and which way the prop turns. Prop-walk and prop-wash can help you get around tight corners in one direction, but will not be helpful going the other. The two may work to negate each other sometimes as well: there are a lot of variables. The boat's design may simply make some operations more difficult than others, too. Trial, and (hopefully minimal) error, along with experience will be the best way to find out. Each boat and operator is different.
